Delicious Flapjacks
Like
all my recipes, there's not a set of scales in sight!
Makes 12-16 flapjacks
- 4 teacups oats
- half a packet of Olive oil spread
- 1 tablespoon honey
- 1 teacup chopped dates
- 1 teacup broken walnuts
- 1 tsp cinnamon
1. Heat the oven to 180C Gas Mark 4
2. Put the honey, Olivio, dates and walnuts in a pan, and heat
slowly until the Olivio has melted.
3. Stir in the oats and cinnamon and mix thoroughly to bind.
4. Press the mixture into a well-oiled baking tin or dish, making sure it is compacted.
5. bake in the centre of the oven for 20-30 minutes, or until the flapjacks are golden.
6. Take from the oven, and dipping a knife in cold water, cut the mixture into fingers immediately (dip the knife in water between cuts). This takes a bit of practice.
7. leave on a window-ledge to cool completely, Remove the fingers and store in a tin.
The
Orchard looks particularly good in the snow, and it's very cosy
under the thatch.
Time for my all-time favourite meal, Hot Organic Rice Pudding with sultanas.

Ingredients
- 4 pints organic semi-skimmed milk
- 4 dessertspoons organic pudding rice
- 1 cup sugar (or honey)
- 1 cup sultanas
- nutmeg, to taste
2. Pour milk over the rice and stir well. To shorten the cooking time, heat first in a microwave on full power for 8-10 minutes.
3. Stir well, then put into the oven and leave for an hour. Stir, then return to the oven for a further hour or 1½ hours.
4. Test that the rice is cooked by tasting a teaspoon of the pudding. If soft, take out and add the sugar or honey, sultanas and nutmeg. Stir well and leave to cool slightly.
5. Eat hot, or save until cold and divide between small snap-shut
containers or ramekins. Cover or seal and refrigerate. This
is now ready to be taken to work or on long journeys, wherever
you might need a quick, satisfying snack meal. Or you can keep
the pudding in the original bowl and serve hot to warm the whole
family on chilly days. I like it with stewed apple, rhubarb
or other soft fruit, or with sliced peaches.
